Our Story

After realising that good coffee and fresh cafe food in Sydney is quite expensive, we decided to open Calypso in 2014. Our aim is to be more affordable and accessible to people without sacrificing on service & quality.

Jenny has an accounting degree. In 2012, after working for a few years at Swagmans Cafe in The Rocks as head barista, she entered the banking world with Westpac.

In late 2014, Jenny decided to act on a business idea of making everyday food and coffee more accessible to people. She returned to hospitality and started Calypso with her husband Derek.
Derek has a pharmacy degree at a top university. He too realised that this career is not where his passion lies. During this time, he saw many inefficiencies in how a cafe operates which may explain why prices are so high. He redirected his focus towards improving the operations of a cafe to make it more affordable for more people.

Derek’s ultimate goal is to make Calypso the most efficiently-run cafe. By cutting out the fat, the result is more reasonable prices for more people.
